Lattice will work really well or you can use drop cloth to. Perhaps tack it on the diagonal up the stairs and then trim and hem the bottom

or you could make your own panel using thin plywood painted with twigs or thin bamboo poles applied to the surface using spray adhesive.

What an interesting problem! I think there are plenty of things that can be done. Perhaps as simple as walling it off on the side we see. I think built in shelving there would be great too. I can't see how you access the freezer but guessing it's an opening off to the right of the picture so if you just move the freezer so you have access but wall in the rest seems like it would be simple.
I wish I could see the whole area on either side of the freezer. Also, I can't tell if the upright posts are against the staircase but I think there is a hallway between them and the counter. If you can place the freezer flat against the wall, enclose the entire space underneath the stairs (2X4's and drywall or paneling plus a door (maybe a barn door!), you could utilize the space for a large storage area.
Have you considered using a tension rod and sheet? They make them very colorful and nice. There is no sewing or anything, just use the hem of the sheet. Also to consider even a light drapery the same way with clips or hooks for the drapes.

What about attaching bifold doors. Or even cabinet doors. You can get them very cheap in Habitat for Humanity or your city's local extension for recycling.
If it's the area beyond the upright posts, I would do sheetrock fitted to the shape of the stairs and paint. That way your fridge would only be visible when you stand in front of it.
