Hi Audrey the first thing that came to my mind was one of those great rolling pantries beside the refrigerator. They're awesome for canned goods and you can make them only about 6 inches deep. There is room for more cupboards with open shelving over them. A workstation made from some furniture upcycling or a snack/art/craft workplace with bar stools. Have fun coming up with something unique.
You can use a bakers rack for additional storage
put the fridge back against the counter and use that corner which has a lot of light to put free hanging shelves with plants, canisters, a hanging collection of beautiful spoons or cook books.

I would move the fridge over and buy a pantry closet for the other side. Or put the pantry in between the fridge and cabinets. Either way you will have more storage. If you need extra counter space, put lower cabinets in and move the fridge up to the cabinets. This way you would not block the window so much.
