I pick them when they are about 8-10 inches long.
Well MOM, it depends on the variety. I pick them short, as if they get too big they get bitter. Just choose one cucumber and do not touch it, let it grow and grow. When it is more than 12" long, pluck it and compare it to a shorter harvested fruit. That way you can determine your desired optimum taste length.

Cucumbers can be picked & eating at any size. If you want pickles, pick small. If your going for just slice & eat, go about 6”to 8”’s. Different varieties make a difference too. Never use if they have turned yellow....very bitter & over grown! Good Luck to you & ENJOY!
