I would say autumn joy sedum too.
Its in the sedum famiky of plants. And its commonly known as a" lives forever"plant. You can let the heads dry naturally on the plant.Or cut them leaving at least a 6 inch stem or longer .Tie or rubber band them into small bunches or singularly &hang upside down to dry naturally in a room. They look great !And they are a periannual zo they return every summer through late fall sometimes until early winter or a late frost.I have grown tgese for many years .So did my mother &grandmother as well.A very easy care plant requiring just planting the first spring &thats about it from then on.Come back thicker every year tgere after. But will can keep it from it from spreading or planting it in a ved.A great old timey type plant.
