Can anyone tell me what type of wood my cupboards are? We think birch. They are about 35 years old. Still in great shape but thinking on sanding them and maybe painting them.

Sorry, we can't tell you what type of wood, especially without a picture. You could remove a drawer and take to a home improvement store and one of the knowledgeable sales associates could likely tell you what type of wood used.
