I have done this--but next time will probably buy a new chair. First: carefully remove as much of the old covering as possible AND SAVE---this will provide an accurate measurement for recovering (the tucked-in/folded over parts are critical). You can find find tips and tricks for recovering a wing chair online. The trickiest part is learning how to drape/fit all the numerous tucks on the upper part of the wing chair. Fabric: Use the best quality upholstery fabric you can afford--then add two additional yards to your estimate/measurements--the wings, back, and seat consume fabric faster than Cookie Monster. You can always use the leftovers for a foot stool or pillows. Cording is easy: Cording covering fabric is cut on the bias and any upholstery sewing book will provide many tips.
The alternative is to make slipcovers: As great as the online/book photos look, it's my opinion that slip-covered wing chairs always look a bit horsey.

You can buy or have made Stretch Covers for these chairs, otherwise I would suggest you might like to join an upholstery class or buy a good book on the subject.
