I used contact paper. It's held up great for about 6 months now.
I recently used Aspect Peel and Stick Tile on mine. The price isn't too high. Cheaper than a traditional tile backsplash.
I used wall paper that looks like the tin ceiling tiles then I put a stain on it and wiped most of that off so that it looked antique and once that dried I sealed it with two coats of poly.
