I would like some ideas how to redo my dinning room ceiling. The seams have cracked and I would like to put some kind of beams across them.

You can buy faux beams at your local home improvement store, Jean.
Here’s how we made some wood faux beams: https://www.frugalfamilytimes.com/2018/09/how-to-make-faux-wood-beam-for-less.html
:)
You can purchase ready made decorative beams at your local lumber store. You may have to order the correct length for your room. If the beams are going over the cracks then you only need to even out the surface. You could put some caulking in the cracks if they are not too wide. Some caulks are paintable.
If you rethink the beams, you can do faux tin ceiling tiles, wallpaper or Anaglypta.
My thought was tin tiles too.
