basil is one of my favorites to root in water. It is so easy!
Philodendrons root in water from cuttings. Also many vegetables will root in water: celery, lettuce, onions, sweet potatoes. You did not say if you were needing flowers or vegetables to root. Other flowers that root in water I know are African violets and begonias. I am going to try my geranium, but I do not know how it will do. I have also grown syngoniums from rooting them in water. I get succulents from a friend as well as purple heart. Best thing is to google each one you are considering to see if it does. My dad is a pro at it.
