You can replace them with any type you like, granite or marble...
or you could paint them. We did that and loved the way they turned out

I believe Corian and quartz countertops require less upkeep than granite.

Vinyl is not a countertop surface you can use. You can paint the laminate or you might consider a different material that is meant to handle the wear and tear of a kitchen surface.
