For the top of my refrigerator I bought a length of heavy plastic meant for a floor, but narrow like a runner. It is easy to take down and wash off in the sink. I don't know why that couldn't be used for the shelves too.

Firm plastic (1/8") cut into shelf sizes should work. A thin wall around the edges will minimize spills from dripping down.
