The scraps of vegetables can be used to make a vegetable broth for soup or other cooking. Place scraps into a big zip-lock bag and toss in freezer. Add new scraps as you get them. Then you can put these in water to extract the vegetable juice to make your stock.
You should just be able to put the end of the celery in water and grow more. I've done this with spring onions as well!

You need to cut the stem we’re they all are joined together leave about 2 inches then put in a cup of water with about a inch of water change water every day and wet the top of the celery in about a week put in dirt eather in a pot or in the ground and it will grow.
Hi Margaret. You can regrow a new celery plant from the very bottom of another one. Place the bottom in a cup covered in water. Change the water often. You will soon see a new plant emerge. Then you can place it in your garden. Good luck Margaret. Stay healthy and well.
