It really depends on what they're made of. Drywall can be skim-coated. Here's a link:

Uneven in what way, do you have any photo's to show the problem. If you mean as in Wood chip wallpaper or patterned plaster walls - then Emulsion paint is what is required. If you mean your plaster is uneven, then have it skimmed by a Plasterer or use Spackle/Polyfilla to do it yourself, before lining the walls before papering. Otherwise you could dry line them with plasterboard or MDF before decorating. Or you could panel bottom part of wall and paper or paint above. It is really up to personal choice.....Remember, in the end it Will be worth the trouble.....!
What are you looking to cover them with? Wood? Wallpaper?
I think it depends on what the issue is, what is uneven, and what you need to have happen. If it's drywall, you can use joint compound or spackle then sand to even things out.
You can add beadboard that is glued on with construction glue. Under $20 for a 4 by 8 panel and it totally disguises the uneven wall.
How are your walls uneven? Is it something like wallpaper was removed unevenly creating irregular surfaces, or house settled due to a high water table, bad drywall job? Need more specific information, please.
You can use sheet rock if they are slightly uneven. If it really bad, strip with 1x4s and then hang sheet rock.
Hello.I live in a log cabin and my previous homeowners placed routine big box hardware store paneling over some bedroom log walls to be able to paint the walls. Certainly log walls are curved and uneven. It was a room brightening transformation. The painted paneling was a fabulous upgrade.

Drywall “mud” or joint compound.
1/4” Sheetrock drywall if you need to veneer a lot of areas.
Drywall is pricey now.
Hello, depends what you want to cover with, paint that is matte can be forgiving, as can textures, or panels.
