Seal my kitchen counters ?
I have ‘butcher block’ counters which look great but I fear the water is running the wood (which I already tell it is). Aside from Wiping it up and leaving towels on it is there a way to seal it so it’s non toxic and more durable to withstand the water pudding up after washing dishes.

You have to Oil the tops on a regular basis to keep them nice and watertight. Otherwise it might be an idea to flood them with a clear resin. Hope that helps. You could always ask a kitchen company what they suggest you do!
We used tung oil to seal and protect ours. Works to preserve. Looks great and non toxic!

Danish Oil will darken the wood slightly and can be combined with oil-based pigments to create wood stains.
Howard cutting board oil, available on Amazon, will be a good solution. It helps to rejuvenate the wood and is a good grade mineral oil.
You might look into pouring a resin top on it.

Specialty butcher block oil is the first thing that came to my mind as well. I eventually gave up and sealed my own butcher bloc with SEVERAL coats of polycrylic.
First of all those are not real butcher block. Butcher block are 1x1 end grain oak, very hard and durable. What you have is a wood countertop. You'll have to decide how you will use it. If you won't use it as a cutting board you can seal it with marine varnish and use separate cutting boards to use with food.
To freshen it up sand down the the counter and then oil it with linseed oil

First you need to sand all off and wash it and then use wood oil to begin and then as maintenance
