You will need to take the door off the hinges first, then remove the door frame. You can then either close the opening by piecing a smaller piece of sheetrock and affixing on both sides OR you can replace the entire 4x8 sheet. I highly recommend screws (slightly countersink) instead of nails to install sheetrock, they don't pull away over time as easily. As for finishing the sheetrock, there is a tape that is fiberglass that I used when I redid my dining room ceiling. I prefer it over the traditional paper tape or the web version. Apply the tape over all joints and cracks. Then apply mud over all tape and screws. You can sand with a fine grit paper but I prefer using a damp sponge. The finish is smooth and there is basically zero dust. Repeat the mud and sand step a minimum of 3 times to get a seamless finish. Then you are ready to prime and paint.

Hi! I'm assuming it's an interior door? We removed one in our old house. You will need to remove the moldings, etc. Then, we added a plate (2×4) at the bottom and a 2×4 in the center. Sheetrock can be fitted in the opening on both sides. If the old framing is deeper than ours was, you may need to reframe the opening. The only time we ran into that was closing in an opening in an old plaster wall, since the wall was plank and plaster. If you have regular framing, you shouldn't have a problem. Our door was only 30 inches wide so the framing in the middle worked for us. You could also create storage in the opening if that appeals to you!
.
I guess you're doing an interior door? If an exterior door, you'll have to consider siding and insulation.
