Demo the old floor. It will create awkward transitions to other rooms and a tripping hazard. My flooring guys would refuse the job - too much of a liability.
I agree! Remove the old before installing the new. Height, transitions, base board molding and door molding would need to be trimmed. Any movement in old floor will transfer to new and cause failure.

You can put like on top of like. But do not put timber in same direction or tile on top of tile best to change size of tile or start with first tile stradling across 4 x joints.
Make sure your subfloor can handle the weight!
