How would you cover a 60's slate stone floor set in concrete?
If you have an old slate floor, and you don't like the look of it anymore, but you don't want the work and expense of ripping it out, one easy solution is to lay a floating floor over it. Floating floors are not attached to the subfloor in any way, but merely sit on top of it. This means that you don't have to alter the underlying floor in any way, so if you change your mind in the future, you can pull up the floating floor and still have your original slate floor.

A floating floor is a good idea and very practical, keep in mind it will raise your floor height.
I would stain the concrete for a new look.
If you want to put a different flooring over it that will depend on the type you choose. You will most likely have to put down luan before a new floor.
I totally agree with staining the concrete.
It depends on what kind of flooring you want. Check with the manufacturer of the one you choose for the best way to install over slate.
Luxury vinyl would do it! Here’s some pros and cons: https://www.frugalfamilytimes.com/2019/08/luxury-vinyl-plank-pros-and-cons/
It really depends on your budget. Floating laminate or vinyl floors are easy to install over pretty much anything assuming your slate floor is level. I have both types of floating floors in my home. Whatever you cover it with will raise the height of the floor and could be a problem when it comes to doorways etc. So just keep that in mind.
I'd be leery of covering that with something that would damage the slate as that's a popular flooring material in some circles, you could diminish the value of your home. You didn't say where these floors are located. Could rugs solve the issue for you? Be aware too should you place something floating over it, if the flooring below becomes damaged, it'll take your floating floor (and wallet) with it.
