How do I get my cucumber plants to grow vegetables, not just flowers?

Cucumbers like a lot of water and they also have male and female flowers. The male flowers will not produce fruit.

Also if temps are too hot, they will go dormant. 105° today, mine are not happy . . .

Male flowers are on long skinny stems. Female flowers are at the end of a bulbous shoot that will be the cucumber, once pollinated. Many vegetables (tomatoes, cucumbers, squash and others) will produce flowers but not set fruit if an environmental requirement is not met. Mostly, this is what Naomie said, it's too hot. If the temps go over 90' in full sun/shade, you're probably not going to get fruit. Also, many of these vegetables do not like to have their leaves watered (except by rain.) Make sure you're watering at the ground level. I always start my cucumbers in early spring after the threat of frost and have harvested them by July.

It is not so much the day time temps as it is the lows at night. If it is consistently 70 or above overnight, they will not set fruit - especially true of tomatoes.

They look healthy. It's possible they aren't being pollinated. Do you have any bees.
