I would say no. The ones I have are not very thick and I believe they would not handle the wear and tear.
Hello. Interesting idea. If you do this project you should post it here. Most people repaint recoat their countertops using bonding primer’s and paints or epoxys.
I would say no. I would be concerned about bacteria getting in the seams.

I don't think these would hold up to well. Especially if you get your counter tops wet.
You might be able to, but I do not think they will last,
It depends on the durability of the tiles, the prep you do, and how you adhere them. Even with peel and stick I would use an adhesive. Good luck and stay safe!
My husband did that for several rental units. Use additional adhesive as they have a tendency to not stick well and come loose, especially if they get wet.
It can be done. I actually put vinyl "peel and stick" tiles over a vinyl bathroom floor. It last a long time, but a couple near toilet did start to shift near the edges. I eventually pulled them up and installed real tile.
You can get a paint kit to cover plastic laminate (Formica) counter tops. The end results can be a solid color or simulate granite.
There’s a counter top paint kit you could get
You can but it usually looks cheap and doesn't hold up well. Why not just get a new piece of laminate. Many places that sell contractor left overs sell formica cheap.
