It would make a cool blanket rack instead of the current trend of ladder.
A large and heavy-duty artist's easel can easily become a TV stand if it's strong enough. Plus, it adds an interesting dimension to your living room and is a great conversation piece. Just place the TV on the bottom shelf and bring the top one down as if you were propping up a canvas Article Source: http://EzineArticles.com/9744540
Use it to hold a painting or a framed chalkboard/messageboard.
You should be able to get an idea or two from these:

I would use it to display artwork in the living room. This or how about a chalkboard? I would definitely bring it into the main flow of your house with something on it that is important.

Instead of spending money trying to transform the easel, I would suggest donating it to a needy art student, or a fledging art college.
As it will continue to be used by those who love and appreciate painting, this way, some of your Dad's spirit will continue to live on.
With today's smart flat tv's, most of which can stream artwork, I think it would make a very unique tv stand.
I think I would just take it apart and keep the wood on hand. Then when you need scrap wood for a different project, you have it. You could make a wood frame out of it. A coffee table tray. Another decor project? I'd just hand on to the tools and make it easy to store as you possible can, and use it when the time is right.
You could take it to pieces and make some picture or mirror frames, but I think I would try to sell it as is and use the money to buy something suitable in your fathers memory with the cash.
Another idea for repurposing this easel is to wrap mesh, garland, and lights around it and make it into a Christmas tree. 🎄
Being flatter on one side would allow it to be placed a little closer to the wall, thus saving some floor space. The easel is sturdy and not tippy, and the new 'tree' would not need an additional tree base or stand.
Here are two examples of easels repurposed into Christmas trees.
Get a pretty picture and stand it on it somewhere in the corner.
Are you married? Maybe you could turn it into a valet for your husband?
it sould be a TV stand .. some art display
You could use it as a way to hang plants. As is without altering it, it does present limits but taking it apart would be a shame in my opinion. Take a look around your house and see what needs you have, if the easel can fill it.
Here are some really great ideas from pinterest https://www.pinterest.ph/vulcansmithy/menagerie-of-repurposed-wooden-easel/
Use it to display pictures.
Would be great in a child's room to display their art.
Mount a sign on it like no parents allowed.
