Without ripping up all your walls to run electrical wiring, how about adding more floor, table and task lamps? Add some mirror decor to bounce the light around.
Or bite the bullet and hire an electrician to run all new electrical wiring for you.
You can get light kits, or put one together yourself. Conduit can be run from an existing electric plug. Conduit is a channel that can be run along the wall eithout opening the wood wall up. You then can run it up the wall to install wall sconces. You can locate the sconces anywhere you like.
How about plug in wall scone lamps. Many styles available so they don’t look like a hotel and this looks like a plank wall.
Yes, lots of companies offer great swing arm lamps. You can also do a great country chandelier that you can attach to the ceiling but swag with lengths of dark colored chain to the wall.

I agree with Dmorrow above. Lots of these available online at Lumen.com and others. I’ve used several of these companies and been very pleased.
Also consider a chandelier. Even if you need to plug it in, changing that wiring not that difficult and added chain relatively inexpensive. Just swag it where you want it.
Personally, I’d hire an electrician and do that right and then it’s done forever (when and if you choose to sell).
