What kind of material is there now? You can put contact paper, wallpaper (Linda's suggestion), or paint laminate. Plastic or metal panels. Fake brick.

i once saw in a college dorm kitchen area wall made out of different sponges. One was vertical and the next was horizontal. They were kitchen scrub sponges in different colors.
I’ve seen LEGO’s, although hard to clean I’d think.
I would stick with smooth things like peel and stick, contact paper is cheap and easy to remove.

If you are allowed to do the backsplash, the cheapest but nice too are the tin types at the home improvement stores. They are peel and stick so you need the wall very clean. They come in the look of brass, aluminum, or copper. They can be cut to any shape and look 3 dimensional. Hope this helps.
