Hi ! That would make a great island !!! I would add casters to the legs , make sure at least 2 of them are locking casters so you can stop it from rolling , but still have the options to move it ! I would add 1 or 2 shelves underneath it . For keeping kitchen supplies , or keep baskets for potatoes or unsightly things . You can put a back and or sides using headboard . Under the ledge of the table sides you can put hooks to hang utensils ,dishcloths , or aprons. Please post your project !!!
We took a children's desk and made one that I still love and use. We built a base for ours, attached heavy duty wheels, etc. Click on my name or picture on this answer and it will take you to my projects. Looks like you have a fun project ahead. Hope you post it!

That will make a terrific island! Make sure you have enough room to move around it before you get into the build. In a kitchen you need at least 36 inches should be provided for walkways between an island and counter. If the counter space contains a work area and appliances such as a sink, stove or dishwasher, the work aisle should be 42 to 48 inches wide.
36 inches is a recommended standard height. This is the same as your counter tops. Seating at a 36-inch-high island is somewhere between a typical kitchen table seat and typical bar stools. Some professionals recommend 42 inches for an island that will be used mainly for seating/eating.
