I would think you could if you had the proper supports to hold the weight. It would depend on your situation.
I don't see why not. Your biggest challenge may be matching the granite.
You could. Proper supports to carry the added weight. On thing to consider is standard counter height may be too low for a breakfast counter.
Hard to tell what you want to do. A picture or better description would help. Is it an island or a counter top. Not understanding what you want to do extend the counter for a place to sit and eat? If yes are there drawers in the way or can you add a hinged piece of wood from under the counter edge that could be dropped down when not in use.
You can build the counter bar height and then add granite. Make sure you have support under the counter. I have corbels on each end.

Hi! Like a peninsula added to one end of your counter? Had you considered free standing pub seating with a top that goes well with your kitchen? Or a separate island? Good luck and stay safe!
Do you want the top of the extension to be made out of the same type of granite as the kitchen countertop? or would a different material suffice?

You could do a second piece of counter lower with chairs next to the other counter for breakfast make it look attached to the higher one.
