Hi Cindy - it depends on your climate. You need a deeper footing in cold areas or the frost will Heave it in winter. Check your local building codes.
typically, a 6" concrete footing works for greenhouses.

Had a greenhouse in both Texas and Oregon 6 inches for both.
There are several factors that go into digging footers. Weight of structure and type of soil are the two main factors for any structure. Also, consider if this will be a permanent fixture. In general, 6" should be fine.
Below the frostline and that depends on where you live.
