As I see it, the difference is a place for seating. You could remove the mirror and add a different one on the wall. Then remove 2 of the drawers for a pull up seating that will most likely be on one side.

If the dresser you want to make into a vanity is lower than conventional counter height, choosing a vessel sink (over a standard drop-in sink) and a tall single lever faucet will help prevent having to bend over at an awkward angle to access the water controls and the basin.
