You can buy peel and stick tiles for this, I think they would be okay as long as they are not submerged

Have you checked out Restore? It's the Habitat for Humanity thrift store and they can have such amazing stuff at affordable prices. I don't know if there is one near you but it's worth a try...you could find all sorts of tile etc at great prices. It's my personal go-to
If I needed a back splash I would use plain glass that i would decorate, paint, decoupage on the back side. So many possibilities.
