Kitchen countertop color ideas ?
Disclaimer-not the best photo to share but this was what I had on my phone.
After 20 years, I am finally going to be able to change the countertop in my kitchen. I love my Mexican brick in my house but I struggle with mixing color with it. I really don’t like a lot of color, but I also don’t want it to be to dark or yellow.
I’ll probably go with Laminate again as I really don’t need granite and/or want tile or concrete. We have limited choices based on our location.
Lets here some color choices to go with brick and cabinets please.

I would go with the marble laminate. Since you have a stone backsplash it would blend well.
Do you want to go with a counter top that is bright and stands out or one that pulls a color out of your back splash?
What color is the cabinetry you are working with?
A palette of muted orange-yellow and earthen orange is offset by Walnut cabinetry provides tonal contrast.
Don't forget to add new (or repaint the old) hardware. Hardware is sort of like jewelery since it has the ability to really set off or accent a room.
I would pick a lighter shade out of the brick and go with that. A lighter color will not show every crumb on your countertop!

I think one is the lighter tan colors would be nice - something with minimal color variation - so it doesn’t compete with your backsplash - like a sandstone color.
I'd lean towards a very pale grey with little to no pattern.

Lime or Olive green would blend well and still allow you to add colour without clashing as green is neutral.... I had the colour in my oak kitchen and never had a problem. My floor was terracotta. Best wishes.
I would go with a neutral, almond learning toward tan, somewhere in there. Remember it will be a long, flat surface reflecting the ceiling light. I love the brick!
Hi Gwyn, you mentioned that you didn't want to go too dark, but a lovely darkish grey would be perfect. A similar color to the grey table (?) towards the front of the last photo you posted

Gray with tan undertones for marble
If it were for my kitchen, I would go with the marble, white with gray. I have seen this in Lowes and Home Depot.
I see lots of gray and beige tones so I would match that
Any very light solid color would work. I say solid because the back splash is already very busy. I am always partial to warmer tones.
I would say gray or beige
Pale ivory would look great with that brick!
