Home Depot has bead board kits. They work very well. I used them in my front bathroom. The great part is one side is wide planks the other are smaller planks.

You can apply the bead board with liquid nails then add trim. For shelves, it depends on the style you want. The easiest is to put up decorative shelf supports like "L" brackets and affix shelving board.

Hang with a nail gun, use trim to cover the seams.
If your closet walls aren't getting too much wear and tear, beadboard wallpaper might be your easiest and least expensive way! Here is a post showing how I did it on my backsplash.
