Nothing much you can do. You can fill in the scratches using paste wax but it would need to be reapplied. Here's something that may help

Hi Kenny, sorry you have scratches on your work top. Hope this helps you. Stay well. How do you fix melamine?
Fill the chipped surface with a finishing filler appropriate for melamine. Fillers are available in custom colors, so find a color that closely matches your melamine cabinet. After it dries, smooth the chipped surface with medium-grit sandpaper. Repeat if necessary.Aug 30, 2017

If your melamine is white, place a small amount of Soft Scrub on a clean lint-free cloth and rub the scratch gently with a circular motion until the scratch is removed.
Don't ever cut anything on a counter top without a cutting board.
On what surface
Try rubbing baking soda in a circular motion to make them less noticable but I don't think anything will take them out. You could also try car products.
It's plastic and scratches are where it's gone, you can't get it back. What about covering with contact paper.
