Hi Judy, here's a youtube tutorial: https://www.youtube.com/watch?v=uf_kFLaJgi4 They did as I would have done with a complete sanding down of the entire top before refinishing in butcher block oil. Unless you don't plan on using it as a cutting board for food prep then, in that case, you could consider a more durable sealant.

How to Naturally Restore a Butcher's Block
I've had butcher block for 50 years.... if you've let it go: 1) use a sponge with the 3M pad on one side and scrub it clean, 2) if there are stains, I use bleach and water on the stain area and keep damping with the mix until it lightens up, 3) when dry, I rub food grade mineral oil with a rag on top, and give a second coat when dry, then when thats dry rub off any excess with a rag or paper towel. Then weekly just reapply a thin coat of the mineral oil..... don't use food oils as they can go rancid.

Howard products for butcher block cutting board should help and it’s food safe.
You don't say how much restoring it needs, but there are steps to take to address them. You will need to sand it to remove burn marks, knife cuts, etc. Sanding will also remove many stains. If not, try some hydrogen peroxide. Once it's ready, apply a safe finish to it. Mineral oil is one.

We use food grade mineral oil, wipe it on and let it set until dry, then put on a second coat and let it set, then wipe off any excess with a paper towel. Beautiful.
