First, be sure you want to do this. If it is in good shape, you might want to rethink this project.
Once you start, there is no going back. This is not just demo, it's full fledged construction. And there needs to be a back up plan with a budget to hire a licensed contractor if it is more than you can do on your own. In a bathroom, it's tricky. If not done properly, it invites the possibility of mold. Mold remediation is very expensive extremely inconvenient.

Also keep in mind that removing tiles (ceramic or plastic) from a wall almost always causes some damage to the drywall/wall surface that the tiles were glued on to. This will have to be repaired or replaced in full before any new tiles or are installed, or before the wall is painted or decorated.
Here's the procedure on how to safely do this:

Wearing protective clothing and eyewear, you will have to break and chip it away. The easiest way we have found to remove tile is to crack it with a hammer, then take a chisel or "wrecking" bar and tap under the edges. Repeat until all the tile and grout are removed. Then remove the cement board where it was attached. Now you have a clean slate.

Carefully break it with a hammer. We usually end up with a mess and replacing some of the drywall. But don't let that scare you. It's not as hard as it seems.
We have removed tile in several bathrooms in our homes and invariably, no matter how careful we are some of the wall gets damaged. You will most likely have to patch the wall in places or even entire walls. It's often a good opportunity to replace old drywall though, with a updated cement or waterproof board product.
Kathy is right in saying to wear protective eyewear when removing any tiles.
I know someone who felt they didn't need to as 'it wasn't a big area they were working on'. A tiny ceramic chip bounced up into and injured their eye. When smashing tiles, the backsides can chip and flake into shards as sharp as broken glass.
