Most ammonia based cleaning solutions that you find in the market for household cleaning purposes contain only 5 to 10% of ammonia, and the rest is water. Ammonia solutions meant for commercial use contain as much as 30% of ammonia in them, but most of them are highly combustible and corrosive.
So the type of ammonia sold in the cleaning isle is just fine.
There is no mention I could find about ammonia damaging pots and pans.
Here are a couple of ways to steam clean your oven using vinegar, you don't need white wine vinegar to do this ( too expensive), just use regular white vinegar
And for the racks, Place racks in a large container, sprinkle with baking soda and spray with vinegar. After the mixture is done foaming, fill the container with water and let the racks soak overnight. After soaking, wipe and scrub the racks, dry, and place back in the oven.

Vinegar and baking soda is the best I've found! Works far better than commercial cleaners.
BTW, You can REMOVE THE OVEN DOOR SO EASILY to clean it and reach the back of the oven! Just open to the 1st little stop and then pull straight up! It slides off the hinges and goes back on the same way! It is heavy so be prepared for the weight.

I think the trick is with regular vinegar, not white wine vinegar. Using your oven’s cleaning setting is probably easier and better.
You should dilute it with water.
