I would use vinegar and baking soda
Here are a couple of ways to steam clean your oven using vinegar, you don't need white wine vinegar to do this ( too expensive), just use regular white vinegar

I don't clean mine with that, I use Dawn and baking soda and it works great. You can see my Hometalk TV episode here - https://www.hometalk.com/tv/clean/44236856/make-your-oven-sparkle-with-these-cleaning-tricks
I think the trick is with regular vinegar, not white wine vinegar. Using your oven’s cleaning setting is probably easier and better.
You should dilute it with water.

And for the racks, Place racks in a large container, sprinkle with baking soda and spray with vinegar. After the mixture is done foaming, fill the container with water and let the racks soak overnight. After soaking, wipe and scrub the racks, dry, and place back in the oven.

How to Clean an Oven With Baking Soda and Vinegar
Place racks in a large container, sprinkle with baking soda and spray with vinegar. After the mixture is done foaming, fill the container with water and let the racks soak overnight. After soaking, wipe and scrub the racks, dry, and place back in the oven.
NOTE: It is WHITE VINEGAR...not "white wine vinegar"
I would delete it with water.
Heat the vinegar and mix with a few tablespoons of Dawn. Put in a spray bottle and spray a cold oven. I would not use this on the racks. It will pitt the racks. You can use this same method with household ammonia and put the racks in the bathtub with ammonia to clean them.
Vinegar and baking soda is the best I've found! Works far better than commercial cleaners.
BTW, You can REMOVE THE OVEN DOOR SO EASILY to clean it and reach the back of the oven! Just open to the 1st little stop and then pull straight up! It slides off the hinges and goes back on the same way! It is heavy so be prepared for the weight.
