I've seen two main solutions to this issue. (1) Cover with contact paper. (2) Paint with either a kit or free hand. If you check here, there are many projects on both to help you decide.
Hello. There are many countertops paint kits available out there also to consider is epoxy pores which gave them more dramatic results. Looking over these things might help you decide and what if either alternative might suit your aesthetic.

Painted Countertops: From Laminate To Granite
We painted our COUNTERTOPS!! The system we used is super durable, no chipping, and still looks brand new one year later.
Simple Epoxy Countertop
There are kits for painting your countertop, you can cover with contact paper, also you can put laminate sheets over it. The contact paper is he least durable.

Hello, I painted mine until I could afford to replace them! Hope this helps you out, here's how I did it!
Lightly sand to rough the countertop up
Go to your paint store, tell them what you are painting, they will pick the proper paint and primer for you, you can even get the primer tinted for a better coverage
Once you have sanded, clean with TSP, then rinse and dry thoroughly,
Apply your primer coat, let it dry according to the instructions
Once the primer coat is dry, apply your paint coat, I would apply 2 or 3 as it will be stronger and thicker
Once your coats dry, you can apply a matte clear coat, either by spray or roll on, keep a small container of it under your sink for touch ups,( I never touched up) I had my counters like this for 12 years, until I could afford new ones.
I used a few uncolored glass cutting boards for protection. It held up very well. And only costs you the prices of the materials.

They make kits for DIY at Home Depot. You can do it yourself but the kits are designed to hold up better than most paints will.
