If the wall is soft such as plasterboard or fibreboard then the easiest and simplest way to hang your cowhide would be to use thin small headed nails or staples – preferably dispensed using a powered staple gun.
Or use these clips to hang it: https://rstyle.me/+QRBHuPD4BAQyRGIwv1lO4A
If it was cleaned and attached to felt/fabric, you could sew rings on it and hang it from them. My Dad did that with a bearskin. If not, you could try Velcro or Command Strips.

How about cuting a shrub or tree branch and adhering to the wall, then hanging the deer skin over it?

You can make a frame and attached the skin to the frame.
Hi! I saw one displayed recently with two curtain tie back brackets, a branch resting on the brackets and the hide draped over the branch. It looked really nice, displayed that way. A thick dowel would also work with two coat hooks, I would think. Good luck and stay safe!
Could you use the command hook velcro stickers? https://amzn.to/2DPJcK3 You'd need a lot of them - but it would damage wall or hide.
