Different nutrients, exact plant sub-type, sun, and scads of variables determine how tall or bushy herbs grow. You get bushier plants that last longer if you harvest or prune before flowering.
Put some fresh herbs in a salad, freeze or dry them, or if you don't have time to process them, toss them in a compost pile or bin. No compost pile? Just dig a small hole in any garden bed to compost the extra herbs in. No animals will bother the minicompost area and your plants will thank you.
Rosemary and basel clippings look lovely in small glasses or vases on the table. We just snip off a few leaves from the table herbs as wanted to add to a salad, make a garnish, ... Let your imagination loose.

I have a utensil container I wanted to fill with herbs but it is a wired not solid like yours. Any ideas what to use to keep dirt from washing out? Thanks!
