They make great stick on backsplash tiles now in hundreds of different designs that might be really great!
You can add small ceramic mosaic tiles.
You can stencil it, just make sure you use laquer to seal it. You want to be able to clean the area. Otherwise peel and stick tiles is your best bet.
There is a shiplap wallpaper you can add and it would be easy to keep clean

How about using magnets and metal tins to have some spices on hand. Magnet hooks for measuring spoons and cups

You could use anything that is heat resistant and is washable. Problem is WHAT!
Maybe, think in terms of temporary then you could use a Transfer or Contact! May be stick or Stick on Tile Covers Tape or maybe use Sharpies to create. Hope that's of some help.
The stove looks to me to be clean and in good condition.
IMO you will be risking causing damage to the finish that may be too hard to retract if you try to 'change' how it looks.
If it ain't broke, don't fix it.
It is not glamorous, only a suggestion...wrap it in aluminum foil, it is heat resistant and change out when soiled.
Yes ,,,,,I agree BORING...maybe try stenciling a design you love..not sure what type of paint you would use,,but I’m sure you could take it off when you get bored of that too,, since it’s not a focal point of the room,,,just the back of a stove for practical purposes you or whoever else cooks are the only ones really looking at it for any length of time,. Maybe some decals of flowers. Ivy maybe a word or phrase you love, it should be something that makes you feel happy,, especially if you have to use the stove every day,,,,, Ughhhhh,!!!!!!? 😊
You could find some great tile for a back splash! If you want something easier - there is peel and stick "tile" that can make the job a lot easier and less expensive.
Folks, Catharine is asking about changing the appearance of the back part of the stove, not the wall behind the stove.
I think Maria’s idea is the best. Get heat resistant pant and stencil something pretty on the back part of the stove.
You could put a decal with a saying on it.

I'm a huge fan of stenciling. They make appliance paint that's safe for ovens. I would go with that and use a stencil adhesive so the edges are crisp.
I would for sure add super cute tiles even stick and peel that are complementing the rest of kitchen
You could buy some cupboard liner, we used to call it MacTac. It's that peel off stuff you can update the insides of cabinets with.
They do make some in pretty patterns, maybe you could find some.
One more thing about using MacTac, it would be super easy to keep it clean. Just wipe with a hot soapy cloth!
If the back portion of the stove is metal, I would locate some pretty magnets (or make my own) and add to the area. They would be easily removable for cleaning.
Pull off the stove knobs (clean thoroughly!) and spray paint them in a bold and bright color that's not boring. Use spray paint made for plastic--Krylon Supermaxx is a good one. For the stovetop, you could try a "stovetop cover" to give the area some interest and more countertop space too. Just google "stovetop cover" and see what you like. For across the back of the stovetop, I would mount a tin sign painted in a design/saying you like that matches your newly painted knobs. You can glue on magnets to the back of the tin sign to mount on the stove back. Hope this gives you some ideas. Good luck!
