Hi Jo like the first answer I also agree that putting in shelves and using it as storage would work great! You could also cover it with a larger picture if you don't want to patch the hole.
Hang a mirror or painting over it.
Line it with wallpaper or contact paper, add shelves, and use as a niche for bathroom items.
I had a huge hole in my bathroom for several years. It really pays to fix the hole and not just hide it.
You didn't mention a dimension or size of hole the medicine cabinet made. But here is a link that explains how to fix that problem.

You could cover the hole with a mirror.
So I would suggest just covering it with a piece of art or perhaps mirror. Something that would be useful and pleasant to look at in the bathroom.
Put some sheetrock into the whole and repair it. You can then wallpaper the sheetrock, put in some glass shelves and have a nice niche for bottles etc.
Add a Large box picture frame and add some ornaments. Something like this.
I think turning into a niche for shelving or covering it with art would both work.

How big is this HOLE? 1"- 1ft or bigger? (How long is a piece of string)?
You could add small tiles to the back and a nice painted wood/MDF frame on the 4 sides. Add permanent or movable wood or glass shelves. A mirror could also be used on the back.

How big is the hole? You could fill it with wood filler or dry wall putty, sand and paint over it. Then you have a flat surface to work with. Easiest way is to just hang something different over the hole.
