Do you have a photo of your current bed? We could give more specific ideas then. Without it - my best idea is to add a "railing" around three sides of the bed and have one side open. :)
Hi Adonna, it does depend on the type of bed you have. Here are lots of ideas! https://www.gaysaroundthebay.com/diy-daybed-and-save-1000/
Hi Adonna, here's a great tutorial that will help you turn your twin beds into a daybed - https://wellworthliving.com/turn-bed-into-daybed/
A photo would help but in general, the only difference is the orientation of the bed. You can remove headboard & footboard (if applicable) and add a "back" that is the length of the bed. An easier way would be to put the "back" on the wall and just park the bed on a frame in front of it.
I got a king sized head board and put it on the twin bed along the sides. Turned it around and put some really pretty pillows on it.

Turn it sideways and add pillows like the back of a couch
I agree with Morgan, you don't need to add a frame to it if you don't want to. In fact in the old days most didn't have frames. There are bolster pillow sets and bedding sold for day beds.

I have a pair of matching twin beds that I would like to know if I can just take the two footboards and make a daybed [no trundle] and use the headboards as the new back for the daybed? thanks
Simply as possible, move the twin bed up against a wall and add throw pillows.
Generally you can slide it up against the wall and add pillows or if you want to go further, you can purchase or assemble a backing piece and a side piece to give it the day bed framed look. Try the search bar at the top left for headboard ideas you can adapt.
Use two headboards to make one end and a back. Make or buy Roll Pillow for end. and add cushions and a slab cover for mattress.
